Mouthwatering Watermelon Pizza

Happy National Watermelon Day! I’ll be celebrating with this healthy and delicious watermelon pizza that will make your mouth water.

Watermelon is one of my favorite summer fruits. It’s so light and refreshing. Biting into a sweet watermelon is one of the simple joys I look forward to every summer.

This watermelon pizza is so easy and quick to make you’ll wonder why you haven’t made it sooner or more often. It’s such a cute snack that both kids and adults will love that will have everybody coming back for more.

I combined a small amount of powdered sugar to mask the tartness of the Greek yogurt and some lime for added zest. The natural sweetness of the fruit above and below the yogurt mix provide just the right balance.

Louisiana is known to have great watermelon. Have you heard of Sugartown? It’s a small town popular for its sweet namesake variety of watermelon. So if you ever get the opportunity to try one, don’t pass it up.

Nutrition

Watermelon is made up mostly of water, but it does contain vitamin C, potassium and, vitamin A. They are low in calories and make a great snack. Due to the high water content, they’re also great juiced.

Watermelons can typically be purchased year-round although it may not be local. Louisiana watermelon season usually runs from May- August.

Watermelon gets its vibrant red color from the antioxidant lycopene which is one of hundreds of carotenoids (pigments formed by plants). According to Medline Plus, lycopene is used for blood pressure, high cholesterol, and cancer despite there being any good evidence to support these claims. Unlike most carotenoids lycopene does not convert to vitamin A.

Storage

Watermelon pizza is best served immediately. I doubt you’ll have any leftovers. It should be eaten the same day, but can be refrigerated for a few hours if you wish to prep ahead of serving.

Watermelon can be stored for up to two weeks prior to being cut. Once cut it should be stored in the refrigerator. It should stay fresh 3-5 days.

It can be frozen for later use. Due to the high water content it will be softer than normal when thawed. So likely the best uses will be in smoothies, slushies, popsicles, or drink recipes. Watermelon can be stored approximately 6 months in the freezer.

Mouthwatering watermelon pizza

This watermelon pizza is the perfect summertime treat that both kids and adults with love.

Course Appetizer, Dessert, Snack

Ingredients
  

  • 2 slices watermelon About 2 inches thick

Fruit spread

  • 1 cup Plain Greek yogurt
  • 1 Tbsp powdered sugar
  • 1 tsp lime juice I used fresh squeezed

Toppings

  • ½ cup strawberries sliced
  • ½ cup blueberries
  • 1 Tbsp lime zest
  • fresh mint leaves

Instructions
 

  • Wash and slice watermelon into round slices about 2 inches thick using a sharp knife. Use the largest middle portion of watermelon to get the best shaped pizza.
  • Mix yogurt, powdered sugar, and lime juice until smooth. Spread evenly onto watermelon.
  • Top with blueberries and strawberries.
  • Garnish with lime zest and mint leaves in center.

Notes

Use any fresh fruit you like. Put as little or as much as you wish similar to regular pizza.
