Pumpkin Spice Overnight Oats

Did you hear that’s it’s National Oats Day?! I love oats. What’s not to love about oats?  Overnight oats is one of my go to breakfasts.  The temperatures have finally dropped in Louisiana. Now I’m in full fall mode, and pumpkin spice is the natural choice.  

Oats have so many healthful properties. You’ll definitely want to include them into your diet. They’re rich in vitamins, minerals, and antioxidants. Plus they keep you feeling full thanks to their soluble fiber. Also research shows they can also help lower cholesterol. The list goes on and on, but you get the picture. Eat your oats. 

If you like pumpkin, you’ll love these pumpkin spice overnight oats. These are a perfect breakfast for a cozy fall day. If you’re short on time that’s okay because it only takes a few minutes to make. Prep the night before, or several nights before, and they’re ready to go when you wake up.

Pumpkin Spice Overnight Oats

Prep Time 5 minutes
Chill overnight 6 hours
Course Breakfast, Snack


  • ½ cup old fashioned oats
  • ½ cup milk of your choice I usually use almond milk
  • ¼ cup plain Greek yogurt
  • ¼ cup pumpkin puree
  • 1 tsp vanilla
  • ½ TBSP honey If not sweet enough, add another ½ TBSP
  • 1 tsp pumpkin pie spice
  • pinch salt


  • Mix all ingredients well in small container such as pint mason jar with lid.
  • Close mason jar and refrigerate overnight.
  • Stir well before eating & enjoy!


Enjoy them cold or warm 30 seconds to 1 minute in microwave.
